Paleo Hazelnut and Chocolate Chip Cookies

I’m really happy with these cookies because they pair really well with Pu’erh tea, which is a fermented tea AND they are sweetened with just a bit of maple syrup, and the chocolate chips are sugar-free. Plus, it’s really easy to make! They are also great for gifting if you put them in a glass jar with a pretty bow!

Ingredients:

2 oz. (1/2 cup) hazelnut flour
4 oz. (1 cup) almond flour
1/4 teaspoon sea salt
1/8 teaspoon stevia leaf powder (green and unprocessed)
1/2 teaspoon baking soda
Zest from one orange
1/4 cup coconut oil, melted
2 Tablespoons maple syrup
1 teaspoon vanilla extract
1/3 cup GoodSam or Lily’s 55% cacao chocolate chips
(These two brands of chocolate chips are sugar-free)
Coarse Celtic sea salt for garnishing (optional)

Note:
Resources on where to get the green stevia leaf powder and sugar-free chocolate chips at the end of this post. Of course, you can also use “regular” chocolate chips, though I recommend choosing ones with at least 72% cacao.
Instead of chocolate chips, you can also substitute with raisins (organic if possible).

  1. Pre-heat oven to 350F.
    Place all the dry ingredients and orange zest in a medium bowl and mix well.

  2. In a small bowl, mix the melted coconut oil or ghee, maple syrup, and vanilla extract.

  3. Slowly pour the wet ingredients into the dry mixture and form a dough.

  4. Gently fold in the chocolate chips.

  5. Line a baking sheet with parchment, and pinch a bit of the dough to shape it into a one-inch round ball. Repeat with the rest of the dough and place the balls about 2” apart.

  6. Gently flatten the balls into a flat round.

  7. Bake for 10 - 12 minutes.*

  8. After removing from the oven, place a few grains of the coarse Celtic sea salt on top of each cookie if desired.

    * As these cookies are made from nuts, DO NOT overbake.
    (Yield: 10-12 cookies)
