Homemade Marshmallows with Honey

This is a super easy AND super healthy way to make marshmallows without any processed sugar or corn syrup. It is also super fun to make!

Ingredients

1 cup cold water, divided in half
1/2 cup honey
3 Tablespoons (30 grams) gelatin, grass-fed is best*
1 teaspoon vanilla extract
Pinch of sea salt
Tapoica or arrowroot flour for dusting

Equipment
Stand mixer
7 x 7, or 8 x 8 square baking pan
parchment paper
spatula
Candy thermometer, optional

Garnishing (optional)
Chopped pistachio, walnuts, or pecans
Rose sugar

Directions
1. Place the honey and 1/2 cup water into a small pan and bring to a simmer.
Let this mixture heat for about 15 minutes, or until it reaches 260 F, which is the "hardball" stage for those of you who are candy makers. If you do not have a thermometer, just be patient and let it gently simmer for a FULL 15 minutes.

2. Meanwhile, put the gelatin powder and 1/2 cup cold water into the bowl of the mixer 
and stir. Then, just let it rest as the gelatin blooms.
Cut out two pieces of parchment into strips and line your baking pan with them with one piece crossed over the other. (see image above)
Dust with a light coating of tapioca or arrowroot powder.

3. Once the honey syrup is ready, carefully pour it into a measuring cup.
   (This mixture is HOT, so be careful.)

4. Now, turn the mixer on to medium and VERY SLOWLY drizzle in about 1/3 of the honey
syrup. Allow this to blend for about 10 seconds. Add the vanilla and salt.

5. Then increase the mixer speed to full, and slowly drizzle in the rest of the syrup.

6. Set aside and watch the magical transformation!

7. In about 8 -10 minutes, the mixture will fluff up and turn into a thick white shiny cloud.

8. Immediately transfer your sweet white cloud into the prepared pan and smooth the top 
with a spatula. Top with garnishes if desired.
9. Place the pan in to fridge and allow it to set for about one hour.
    Cut into squares when ready. 
10. And congratulations! You have made marshmallows WITHOUT processed sugar or corn syrup!
Note: Store any remaining marshmallows in the fridge and enjoy within a week.
