Creamy Cauliflower & Garlic Soup - Vegan
Cream Cauliflower & Garlic Soup topped with Furikake & Chili Oil
This absolutely silky and satisfying soup is stunningly simple to make and is a delicious foundation for just about any topping that you would like to garnish it with.
Yield: 2 servings
Ingredients:
12 oz. raw cauliflower, rough chopped
(you can include the core)
6 - 8 gloves garlic, peeled
(If you REALLY like garlic, you can certainly add in a few more cloves)
2 cups vegetable broth or filtered water
Sea salt (to taste)
White pepper (to taste)
1 Tablespoon tahini
1/2 teaspoon nutritional yeast (optional)
!. Place the chopped cauliflower, garlic cloves and water or broth in a pan and bring to a gentle simmer until the cauliflower is very tender.
2. Allow the cooked mixture to cool for about 10 minutes and pour into a blender. Puree until smooth.
3. Add the tahini, and nutritional yeast if using. And blend for a few seconds.
4. Add in a small amount of salt (about 1/4 teaspoon) and a small pinch of white pepper. Blend and taste.
5. Adjust seasoning as needed.
6. Return to the pot and heat up again before serving.
Garnish with anything that makes you happy.
